Pancake mix

This is a great recipe to mix the dry ingredients and have on hand. We eat this a lot and with the addition of our farm fresh eggs in the batter, it is a great breakfast! I also sneak in a little home canned applesauce from time to time, just scale back the liquid a bit, or leave out the oil.

Ingredients for dry mix:
4 Cups All purpose flour
2 Cups Wheat flour
2/3 Cup Sugar
2 Tablespoons Baking Powder
2 Tablespoons Baking Soda
(You can add more of the wheat flour and less of the all purpose if you prefer)

Directions for making pancake batter:
Take 1 1/2 cup of dry mix, add 1-2 eggs and 3/4 Cup milk.  I also add 1 teaspoon of vanilla and 1 teaspoon of vegetable oil. Depending on how thick or thin you like to have your pancakes you may increase or decrease your milk.
